Wonderful Veggie Curry - Hot Recipes



Ingredients:
3 tablespoons vegetable oil
3/4 teaspoon black mustard seeds
5 -6 medium garlic cloves, minced
1 -1 1/2 teaspoon cinnamon
3/4 teaspoon cardamom
3/4 teaspoon ground cumin
2 teaspoons ground coriander
3/4 teaspoon fennel seed
1 1/2 teaspoons turmeric
2 -3 teaspoons fresh gingerroot, grated
3/4 teaspoon cayenne
1/2-1 teaspoon salt (I use sea salt)
2 cups onions, chopped (can omit if you don't like) (optional)
2 medium carrots, sliced
3 cups sweet potatoes, cubed
1 medium head cauliflower, cut into florets
3/4 cup water
2 medium tomatoes, chopped
2 cups frozen green peas or 2 medium green peppers, chopped

Optional sides
 
plainsoy yogurt (optional) or dairy yogurt (optional)
cashews (optional) or slivered almond, lightly toasted (optional)
raisins (optional)
sliced banana (optional)


Directions:

Soften the onion, if using in a little water in a small pot. Set aside.

In a separate, large pot, begin steaming the sweet potatoes. After about 5-10 minutes add the carrots; in 5 more minutes add the cauliflower. Steam for 5 minutes more. (They don't need to be cooked yet, just basically warmed.).

Meanwhile, heat the oil over medium in a small frying pan;add the mustard seeds and saute till they begin to pop. Add the remaining spices and cook on LOW heat for a minute or two, be very careful not to burn them. Remove from heat.

Remove the steamer basket from the veggies, add the softened onion and stir in the spice mixture. Add water.

Bring to a gentle simmer and cook, stirring occasionally, for 20 minutes.

When sweet potatoes are tender but not totally cooked, add the tomatoes and peas/peppers (a combo works fine). Simmer for another 15 minutes.

Serve over your favorite basmati rice, with the garnishes for a more Indian-style meal. Enjoy!

Balti Fish Curry - Hot Recipes


Ingredients:
800 g white fish fillets
1 tablespoon vegetable oil
3 medium white onions, sliced thinly
3 garlic cloves, crushed
1 tablespoon fresh ginger, grated
1 red Thai chile, chopped finely (use more if you wish)
2 teaspoons ground turmeric
1 teaspoon sweet paprika
1 teaspoon ground cumin
2 (400 g) cans whole tomatoes
salt
1/2 cup coconut cream
1/4 cup fresh coriander, loosely packed and finely chopped
1 tablespoon fresh mint, finely chopped

 Directions:

Cut fish into 2cm pieces.

Heat oil in wok or pan, cook onion, garlic, ginger, chilli and spices until onion softens.

Add undrained crushed tomatoes to onion mixture, season to taste and bring to boil.

Reduce heat, simmer, uncovered about 10 minutes or until sauce thickens slightly.

Add fish and coconut cream, bring to boil.
6
Reduce heat, simmer, uncovered about 10 minutes or until fish is cooked through.

Just before serving, stir in coriander and mint.
8
Serve with rice.

Qaubuli Palau (Yellow Rice With Carrots and Ground Beef) - Hot recipes


 Ingredients:

1 lb basmati rice
6 tablespoons olive oil
2 medium onions, chopped
1 1/2 lbs ground beef
salt
pepper
2 large carrots
1/4 cup raisins
2 teaspoons garam masala or 2 teaspoons bahrat mixed spice 1/4 teaspoon saffron

Directions:

1  Rinse the rice several times in cold water until the water runs clear. Add fresh water and leave the rice to soak for at least half an hour.
2  Preheat oven to 325.
3  Heat 2 tablespoons of oil in a large pan and add the onions; stir and cook until brown. Remove the onions and set them aside.
4  Add ground beef to the hot oil. Brown the meat. Add one cup of water and salt and pepper to taste. Bring to a boil, then lower the heat, cover and simmer until the meat is tender. After the meat is cooked, remove it from the broth and set it on a plate.
5  Grind the onions to a pulp and add them to the meat broth.
6  Wash and peel the carrots and cut into pieces the size of matchsticks. Heat 2 tablespoons of the oil in a small pan and add the carrots. Cook gently until the carrots are lightly browned and tender (adding a little water, which will evaporate during cooking). Add the raisins and cook gently until they begin to swell. Remove the raisins and carrots from oil.
7  Bring 5 cups of water to a boil in a pot and add 1 teaspoon of salt. Add the rinsed rice to the boiling water. Parboil for 2 to 3 minutes, then drain in a large sieve.
8  Pour the rice into a large casserole and sprinkle with garam masala and saffron.
9  Measure ¾ cup of the reserved meat juices and pour over the rice, stirring once. Place the cooked meat on one side of the pan and the carrots and raisins on the other adding the reserved oil cook for 25 minutes in the preheated oven.
10  To serve, remove the carrots and raisins and set aside. Place the rice on a serving platter. Top the rice with the meat, then garnish with the carrots and raisins.

Soul Food Recipes - Okra, Corn and Tomatoes

Okra, Corn and Tomatoes Recipe
"Okra and onions are fried with bacon, then simmered with tomato and corn in this delicious side dish that is especially good served alongside cornbread. This recipe is a longtime family favorite."






Ingredients

  • 2 slices bacon, chopped
  • 1 medium onion, chopped
  • 1 (10 ounce) package frozen cut okra
  • 1 (14.5 ounce) can diced tomatoes, drained
  • 1 (20 ounce) package frozen corn
  • 1 tablespoon file powder
  • salt and pepper to taste

Directions

  1. Place bacon in a large skillet over medium-high heat. Cook and stir to release some of the juices, then add the onion and okra. Fry until tender and browned, stirring constantly. Be careful, as this tends to brown quickly.
  2. Pour in the tomatoes, and simmer over medium heat for 20 minutes. Mix in the corn, and simmer for another 10 minutes. Season with file powder, salt and pepper, and serve.

3 lbs chicken 
4 tablespoons tomato sauce 
2 tablespoons soy sauce 
1 tablespoon dry sherry

1 clove garlic, crushed 
1 piece green ginger, grated (1-inch)

Recipe

  1. Wash and dry chicken. 
  2. Combine the rest of the ingredients together and mix well. 
  3. Add the chicken, coat well with the marinade. Allow to stand several hours or overnight in refrigerator. 
  4. Place chicken in a baking dish and pour over marinade. Cover dish with foil. 
  5. Bake in a moderate oven 1 1/2 hours, remove foil, bake a further 30 minutes, brushing frequently with marinade.

6 English muffin 
1 lb ground beef or chorizo sausage 
1 cup Cheese Whiz 
1/4 cup margarine

Recipe

1Split English muffins, place on baking sheet. 
2Cook and drain hamburg, then let cool. 
3Heat oven to 350. 
4Mix cheese whiz and margarine, then add to hamburg. 
5Spread evenly on English muffin halves. 
6Bake about 10 minutes. 
7Can be served immediately, or frozen. 
8To freeze, wrap individually in saran wrap, then combine in zip-type bag. 
9To reheat from frozen, remove saran wrap, wrap loosely in paper towel and zap in microwave on high about 2 minutes. 
10Note -- instead of the cheese whiz and margarine, sometimes I use a 30g envelope of cheese sauce mix, prepared as directed. Nacho cheese sauce mix is particularly good !

Tea time treat with moong daal dhai baray recipe, easy to make spicy dahi baray with all simple and healthy ingrdients

Ingredients

2 cups dal maash dhuli (white)
Presoaked for 45 hours
Pinch of baking soda
1/2 teaspoon salt
Pinch of heeng

Recipe

Mill the presoaked daal into a sticky paste and put in rest of the spices.
Combine well and leave for half hour.
Next in a fry pan put in 1 tbs. of oil and then drop spoonfuls of this batter into the pan to make flat curved patties and you’ll stir fry till they are light brown.
DO NOT TURN OVER TO FRY OTHER SIDE.
In the meantime, you’ll heat oil for deep frying and then deep fry these patties.
When yellow brown take away from heat and cool.
When you go to serve, immerse in a bowl of water and when a slight soft squeeze out the water between palms and put in the already prepared yogurt.
YOGURT: Beat the yogurt including a small amount of water to make a paste.
Include salt, red chili powder with 1/2 tsp of zeera powder.
Garnish dahi baray with syrupy Imli sauce and Chat Masala.

Ingredients

14 ounces tuna steaks
1 small red onion, thinly sliced
1 tomato, seeded and chopped
1 small red pepper, thinly sliced
2 (14-ounce) cans cannellini beans
2 garlic cloves, crushed
1 teaspoon chopped thyme
4 tablespoons finely chopped Italian parsley
1 1/2 tablespoons lemon juice
1/3 cup extra-virgin olive oil
1 teaspoon honey
4 handfuls arugula

Recipe


Put the tuna steaks on a plate, dust with cracked black pepper on all sides, wrap with plastic wrap and refrigerate until you need it again.
Mix the onion, tomato with pepper in a big bowl. Wash the cannellini beans with cold running water for half minute, rinse and put in the bowl with the garlic, thyme plus 3 tablespoons of the parsley.
Put the lemon juice, oil with honey in a little saucepan, on a boiling temperature, then simmer, mixing, for 60 seconds or until the honey melts and mixes well. Take out from the heat.
Cook the tuna on a hot, slightly oiled barbecue grill or leveled plate for 60 seconds or more on each side. The meat should still be crimson colored in the middle. Slice into little cubes and mix with the salad. Toss with the hot dressing.
Place the arugula on a platter well. Top with the salad, season finely and toss with the left over parsley.
